
My friend, Alexandra, is one of the most beautiful women I have the pleasure of knowing. Is it because she’s incredibly fit? Or maybe it’s because she has the sweetest personality I’ve EVER come across? Either way, I adore this girl and I am sad I don’t get to see her–or teach fitness with her–much anymore. (We live too far apart!) BUT, because I’m social-media obsessed, I do keep up with her on Facebook. And this week she posted some recipes that left my belly grumbling. I cannot wait to try these out–they are completely up my ally. Thanks Alexandra for sharing!
Some of you have been asking me about my protein pancakes and other clean recipes so I’ve compiled a few of my favorites 🙂
Cinnamon Protein Cakes
- 2.5 tbs coconut flour
- teaspoon of ground flaxseed meal
- 2 tbs oat flour (you can totally make your own by throwing oats in the food processor)
- 2 tbs canned pumpkin
- 1/2 cup liquid egg whites
- teaspoon cinnamon
- 1/2 teaspoon baking powder
- 2 tbs water
Directions: Throw it all in a blender and cook over medium heat. These are so dense and fluffy and delicious! Put whatever your heart desires on top. I like melted peanut butter and berries the best!
Sweet Potato Protein Bread
- 1 cup prepared mashed sweet potatoes or 1 big cooked sweet potato
- 1 scoop vanilla whey protein
- 4 tbs coconut flour
- 1/2 cup liquid egg whites
- 1/8 cup sliced almonds (or whatever nuts you choose)
- teaspoon cinnamon
- 2-3 packets stevia
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
Directions: Mix and cook 30-35 minutes on 350. SO yummy and great post workout!
Sweet Potato Pancakes
- 1/4 cup mashed sweet potato
- 1/4 cup oats
- 1/4 cup unsweetened vanilla almond milk
- teaspoon pure maple syrup (you can add more if you want, but I don’t like super sweet)
- 1/2 cup egg whites
- 2 tbs almond flour
- optional- scoop of vanilla whey
Directions: Blend and cook on medium. I love these for breakfast or lunch!
PBJ Mug Cake
- 3 tbs liquid egg whites
- 1 tbs coconut flour
- 1/4 cup berries
- 1/8 cup unsweetened almond milk
- 2 tbs PB2 or peanut flour
- 1/8 cup oats
Directions: Mix together in a mug and microwave for 2 minutes. The best part is that the berries turn into a melty sauce! Dump it out on a plate and top with tbs nut butter and a teaspoon of sugar free jelly. HEAVEN!
