
Ok, so you don’t have time to make a salad, grill up some chicken, make a wrap, cook for the week, whatever. No big deal. Sometimes life happens and we need a super fast lunch to grab and go. Are there healthy options out there? I’m not talking about your traditional frozen marketed as “healthy pasta with fake cheese” dish. I’m talking real food. And YES, it exists! One of my favorite go-to quick meals takes only a few minutes in the microwave to heat up and voila! Lunch is served. Veggie Lites can be found in the frozen foods section of Walmart, Martins, and sometimes even Costco. There are many different selections from Zucchini Marinara to Butternut Squash (my favorite.) Many even have up to 9 grams of protein, though I like to eat a tuna cup or small cottage cheese cup with mine. Add a small handful of Almonds and you’ve successfully created a super-healthy lunch with all the required macro-nutrients. Veggie lites are also nut-free and gluten-free!
