As you all know, I have a bit of an obsession with cooking breakfast and pancakes. I decided to try out a savory recipe to have as a post workout lunch, and these were such a win.
I present to you, spicy chicken protein pancakes! You may wonder about my taste buds when you see the ingredient list, but I promise they were delectable and totally hit the spot.
You’ll need:
- 1/2 cup liquid egg whites
- 1/4 cup mashed sweet potatoes
- 1/4 cup rolled oats (If you want a paleo recipe, just use 1/2 cup of sweet potatoes)
- 1 cup of spinach
- tsp baking powder
- chopped or dried onion to taste
- 1/2 tsp garlic powder
- 1/4 tsp cayenne
- pepper to taste
- 2-3 oz pre cooked, diced chicken breast
Add everything except the chicken to a blender and mix until pureed. Stir in diced chicken by hand and pour batter into a skillet on medium. Cook like a pancake. Mine made 2 big ones. Make sure you watch these and flip after a few minutes, because they can burn quickly.
For the dipping sauce: mix 2 tbs of plain yogurt, 1 tbs dijon mustard, and 1 tsp of hot sauce. I wanted to stretch my sauce so I added a little bit of water to thin it out.
Macros for the WHOLE recipe with sauce: 317 cal, 30 g C, 5 g F, 36 g P. Amazing in my book!
