
One of my favorite foods is cottage cheese and I’ve been known to eat it A) every day and B) in a variety of ways. I grew up eating cottage cheese–I remember my dad giving me a bowl of it one day with a big scoop of strawberry jam mixed in. Since then, I’ve been mixing and matching it in every way imaginable. I’ve used cottage cheese as a substitute for mayo in tuna salad, I’ve dumped gluten-free chocolate chips into the container when battling a sweet craving, and most recently, I dumped powdered peanut butter into my bowl with a heaping spoonful of cinnamon and a sprinkle of walnuts. Of course, all that may be a little far-fetched. You may like your cottage cheese with fresh fruit, or maybe some mixed nuts. Pineapple and peanuts go well together. But my point is, anyway you want it, that’s the way you need it. Oh wait, that was Journey’s point. MY point is that cottage cheese is a low carb, high protein snack in which you absolutely cannot go wrong. Some people prefer low fat versions and some higher fat–my opinion is that it doesn’t really matter. I like higher fat because there are less sugars added. Pick your cheesiness and have fun!
